GASTRONOMY

Among the recipes and traditional dishes of Alsace, some of the most popular are onion tart (Zewelkueche), saveloy vinaigrette, asparagus (Sparichle) accompanied by three sauces, a typical stew called the Baeckeoffe, tarte flambée, more precisely:  Flamekuche or Flammekueche, now known throughout France, formerly a speciality of part of the Bas-Rhin department near Strasbourg, sauerkraut, Schiffala or Schiffele, the rolled pastry with pork and veal called Fleischschnacka. 
The goose foie gras pâté, produced since the 17th century, is an Alsatian speciality... as much as from Landes. There are many traditional desserts: kugelhopf or kougelhopf, which is often called Kouglof in French, fruit tarts, in particular with quetsch plums and soft white cheese, a large variety of biscuits and small cakes, called Bredala (specialities for Advent), gingerbread.
