GASTRONOMY
Aligot (cheese and potato fondue), Laguiole cheese, fouace (regional pastry) and meat of Aubrac accompanied by the wines of Estaing or Entraygues, fois gras, tripe, duck confits, cabbage rolls and Estofinado (a dish of potatoes and dried fish) served with Marcillac, le Fel or Entraygues wine. Closer to Millau and Roquefort, the food is spicier: thrush pâté with goose liver, lamb, Roquefort pastry, sheep's milk curd and the famous Roquefort cheese, flônes, accompanied by wines from the Tarn Valley.
